Description

This Zucchini Casserole is a delicious and easy way to use up your garden zucchini. It’s cheesy, flavorful, and perfect as a side dish or light meal.


Ingredients

  • 4 cups zucchini, shredded
  • 1 small onion, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1/4 cup melted butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish.
  3. In a large bowl, combine zucchini, onion, cheddar cheese, Parmesan cheese, sour cream, flour, eggs, melted butter, and garlic powder. Season with salt and pepper.
  4. Pour mixture into the prepared baking dish.
  5. Bake for 30-40 minutes, or until golden brown and set.
  6. Let stand for 10 minutes before serving.

Notes

  • For a spicier casserole, add a pinch of red pepper flakes.
  • You can substitute other cheeses, such as mozzarella or Monterey Jack.
  • Add bread crumbs on top for a crispier topping.
