- 4 cups zucchini, shredded
- 1 small onion, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup sour cream
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1/4 cup melted butter
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Grease a 9×13 inch baking dish.
- In a large bowl, combine zucchini, onion, cheddar cheese, Parmesan cheese, sour cream, flour, eggs, melted butter, and garlic powder. Season with salt and pepper.
- Pour mixture into the prepared baking dish.
- Bake for 30-40 minutes, or until golden brown and set.
- Let stand for 10 minutes before serving.
Notes
- For a spicier casserole, add a pinch of red pepper flakes.
- You can substitute other cheeses, such as mozzarella or Monterey Jack.
- Add bread crumbs on top for a crispier topping.
