- 2 medium zucchinis, grated
- 1 egg
- 1/2 cup almond flour
- 1/4 cup grated parmesan cheese
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil for frying
Instructions
- Grate the zucchinis and squeeze out excess moisture with a clean towel.
- In a bowl, mix zucchini, egg, almond flour, parmesan, garlic, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Form the mixture into small patties and fry for 3-4 minutes per side until golden.
- Drain on paper towels before serving.
Notes
- Serve with sour cream or sugar-free ketchup.
- Store leftovers in the fridge for up to 3 days.
- For crispier fritters, squeeze more moisture from the zucchini.
