Description

These easy keto zucchini fritters require just 6 ingredients and make a delicious low-carb side dish or snack.


Ingredients

  • 2 medium zucchinis, grated
  • 1 egg
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for frying

Instructions

  1. Grate the zucchinis and squeeze out excess moisture with a clean towel.
  2. In a bowl, mix zucchini, egg, almond flour, parmesan, garlic, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Form the mixture into small patties and fry for 3-4 minutes per side until golden.
