- 2 medium zucchini, grated
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Grate zucchini and squeeze out excess moisture.
- In a bowl, combine zucchini, cheddar cheese, Parmesan cheese, breadcrumbs, egg, garlic, olive oil, salt, and pepper.
- Mix well.
- Form mixture into small patties.
- Place patties on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Serve warm.
Notes
- Squeeze as much moisture as possible from the zucchini for crispier fritters.
- You can add other vegetables, such as carrots or onions.
- Adjust seasoning to your taste.
