Description

Ingredients

Scale
  • 2 medium zucchini, grated
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grate zucchini and squeeze out excess moisture.
  3. In a bowl, combine zucchini, cheddar cheese, Parmesan cheese, breadcrumbs, egg, garlic, olive oil, salt, and pepper.
  4. Mix well.
  5. Form mixture into small patties.
  6. Place patties on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes, or until golden brown and crispy.
  8. Serve warm.

Notes

  • Squeeze as much moisture as possible from the zucchini for crispier fritters.
  • You can add other vegetables, such as carrots or onions.
