- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 1 cup pumpkin puree
- 1 cup grated zucchini
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, combine pumpkin puree, zucchini, applesauce, maple syrup, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the chocolate chips.
- Pour batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- You can substitute whole wheat flour for all-purpose flour.
- Add nuts or dried fruit for extra flavor and texture.
- Store bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
