Simple and hearty ground beef zucchini casserole. It is a comforting and flavorful dish.

- 1 pound ground beef
- 2 medium zucchini, sliced
- 1 onion, chopped
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- Brown ground beef in a large skillet over medium heat. Drain excess grease.
- Add onion and cook until softened, about 5 minutes.
- Stir in crushed tomatoes, oregano, garlic powder, salt, and pepper. Bring to a simmer and cook for 10 minutes.
- In a baking dish, layer half of the zucchini slices, then half of the meat sauce, and half of the cheese. Repeat layers.
- Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for 10 minutes before serving.
Notes
- You can add other vegetables like bell peppers or mushrooms.
- For a spicier dish, add a pinch of red pepper flakes.
- Use any cheese you like, such as cheddar or Monterey Jack.
