Description

Simple and hearty ground beef zucchini casserole. It is a comforting and flavorful dish.


Ingredients

  • 1 pound ground beef
  • 2 medium zucchini, sliced
  • 1 onion, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Brown ground beef in a large skillet over medium heat. Drain excess grease.
  3. Add onion and cook until softened, about 5 minutes.
  4. Stir in crushed tomatoes, oregano, garlic powder, salt, and pepper. Bring to a simmer and cook for 10 minutes.
  5. In a baking dish, layer half of the zucchini slices, then half of the meat sauce, and half of the cheese. Repeat layers.
  6. Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  7. Let stand for 10 minutes before serving.

Notes

  • You can add other vegetables like bell peppers or mushrooms.
  • For a spicier dish, add a pinch of red pepper flakes.
  • Use any cheese you like, such as cheddar or Monterey Jack.
