Crispy and flavorful garlic parmesan roasted potatoes.
Ingredients

- 2 lbs Yukon gold potatoes, cubed
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1 tsp dried Italian herbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with olive oil, garlic, Italian herbs, salt, and pepper.
- Spread potatoes in a single layer on a baking sheet.
- Roast for 30 minutes.
- Remove from oven and sprinkle with Parmesan cheese.
- Roast for another 10-15 minutes, or until golden brown and crispy.
- Garnish with fresh parsley before serving.
Notes
- For extra crispy potatoes, soak them in cold water for 30 minutes before roasting.
- Adjust the amount of garlic and Parmesan to your taste.
- You can use other types of potatoes, such as russet or red potatoes.
