- 1 pound ground beef
- 2 medium zucchini, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in zucchini, crushed tomatoes, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until zucchini is tender.
- Pour the mixture into a 9×13 inch baking dish.
- Sprinkle mozzarella cheese evenly over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- You can add other vegetables, such as bell peppers or mushrooms.
- For a spicier dish, add a pinch of red pepper flakes.
- Store leftovers in the refrigerator for up to 3 days.
