Description

This easy ground beef zucchini casserole is a quick, healthy, and delicious meal perfect for busy weeknights. It’s packed with flavor and nutrients, making it a family favorite.


Ingredients

  • 1 pound ground beef
  • 2 medium zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in zucchini, crushed tomatoes, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until zucchini is tender.
  5. Pour the mixture into a 9×13 inch baking dish.
  6. Sprinkle mozzarella cheese evenly over the top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let stand for a few minutes before serving.

Notes
