- 2 medium zucchini, sliced
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1/4 cup olive oil
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, sauté onion and garlic in olive oil until softened.
- In a bowl, combine zucchini, sautéed onion and garlic, bread crumbs, Parmesan cheese, salt, pepper, and egg.
- Pour mixture into a greased baking dish.
- Bake for 20-25 minutes, or until golden brown and zucchini is tender.
- Let cool slightly before serving.

- Top with extra bread crumbs for a crispier crust.
