Description

This Easy Baked Zucchini Casserole is a simple and delicious side dish or light meal.


Ingredients

  • 2 medium zucchini, sliced
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, sauté onion and garlic in olive oil until softened.
  3. In a bowl, combine zucchini, sautéed onion and garlic, bread crumbs, Parmesan cheese, salt, pepper, and egg.
  4. Pour mixture into a greased baking dish.
  5. Bake for 20-25 minutes, or until golden brown and zucchini is tender.
  6. Let cool slightly before serving.
