- 2 medium zucchinis, grated
- 1/2 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 egg, lightly beaten
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Grate the zucchini and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
- In a bowl, mix zucchini, flour, Parmesan, egg, garlic, parsley, and pepper.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet, flattening slightly.
- Cook for 3-4 minutes per side until golden brown.
- Drain on paper towels before serving.
Notes
- Serve with sour cream or yogurt dip.
- For extra crispiness, press out as much moisture as possible.
- Can be reheated in a toaster oven.
