Description

Crispy zucchini fritters are a delicious and easy-to-make snack or side dish. Perfect for using up extra zucchini, these fritters are golden, crunchy, and full of flavor.


Ingredients

  • 2 medium zucchinis, grated
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Grate the zucchini and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
  2. In a bowl, mix zucchini, flour, Parmesan, egg, garlic, parsley, and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the skillet, flattening slightly.
  5. Cook for 3-4 minutes per side until golden brown.
  6. Drain on paper towels before serving.
