Instructions
- Squeeze excess moisture from the grated zucchini using a clean towel.
- In a bowl, mix zucchini, flour, Parmesan, egg, salt, and pepper.
- Heat olive oil in a pan over medium heat.
- Scoop small portions of the mixture and flatten into patties.
- Fry each patty for 2-3 minutes per side until golden and crispy.
- Drain on paper towels before serving.

- Use a cheesecloth for better moisture removal.
- Serve with yogurt or sour cream for dipping.
