Instructions

  1. Squeeze excess moisture from the grated zucchini using a clean towel.
  2. In a bowl, mix zucchini, flour, Parmesan, egg, salt, and pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Scoop small portions of the mixture and flatten into patties.
  5. Fry each patty for 2-3 minutes per side until golden and crispy.
