Description

Crispy zucchini fritters are a quick and easy gluten-free dish. Perfect for a snack or side dish, ready in just 25 minutes.


Ingredients

  • 2 medium zucchinis, grated
  • 1/2 teaspoon salt
  • 1/4 cup gluten-free flour
  • 1 egg, beaten
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Grate the zucchini and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
  2. In a bowl, mix zucchini, gluten-free flour, egg, and black pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Scoop spoonfuls of the mixture into the pan and flatten slightly.
  5. Cook for 3-4 minutes per side until golden brown.
  6. Drain on paper towels and serve warm.
