Description

These crispy garlic butter potato cubes are a flavorful and easy side dish. They are perfect for any meal.


Ingredients

  • 1.5 lbs Yukon gold potatoes, cubed
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potato cubes with olive oil, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  5. While potatoes are baking, melt butter in a skillet over medium heat.
  6. Add garlic and cook for 1-2 minutes, or until fragrant.
  7. Remove from heat and stir in parsley.
  8. Once potatoes are done, transfer them to the skillet with the garlic butter.
  9. Toss to coat.
