- 1.5 lbs Yukon gold potatoes, cubed
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potato cubes with olive oil, salt, and pepper.
- Spread potatoes in a single layer on a baking sheet.
- Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
- While potatoes are baking, melt butter in a skillet over medium heat.
- Add garlic and cook for 1-2 minutes, or until fragrant.
- Remove from heat and stir in parsley.
- Once potatoes are done, transfer them to the skillet with the garlic butter.
- Toss to coat.
- Serve immediately.
Notes
- For extra crispy potatoes, soak the cubed potatoes in cold water for 30 minutes before roasting.
- You can use other herbs like rosemary or thyme.
